Sorry for the late reply, see screenshot attached. As you can see the Title of the project appears to be tied to the name of the document folder.
Dimhelmet - I've checked the workflow button in that window, no workflows are set to run (in that form anyway) I think you're right, but I'm not sure when the workflow is triggered to create that folder.
